Celebrity TV host and renowned chef Anthony Bourdain thinks that the Philippines’ very own sizzling and crispy Pork Sisig is the dish that is going to hook people abroad who have not had any exposure to Filipino food. He says that sisig is ‘positioned to win the hearts and minds of the world as a whole.’ In an interview with CNN Philippines, Bourdain feels that Filipino cuisine is underrated. He definitely sees that there is a “really bright future” for Pinoy food in the international food community. This is true today as a number of restaurants and Philippine dishes are gaining recognition, such as the restaurant of Filipino-American Chef Tom Cunanan Bad Saint in Washington DC. It is second in rank in “America’s Best New Restaurants” list in Bon Apétit magazine. Although the traditional sour-and-bitter Pinoy food may have been unfamiliar years ago, American palates have been changing today. There are huge opportunities for Filipino cuisine to put itself on the map in the international food community officially. Food and Wine lists down a number of restaurants in the US where anyone can satisfy their craving for pork sisig. In Manhattan’s East Village is Maharlika, serving great Filipino food in New York. Jeepney and Pig and Khao are also good options in NYC. Another is Mama Fina’s House of Filipino Sisig in New Jersey, Elmwood Park.
