With 16 years of experience combined, the owners, Chef Ro Quintos and Sir Kenneth Miclat want nothing else than to share their passion for coffee and food in every event booked. Since the mobile cafe comes under the wing of Baguio’s best-kept secrets, “Cafe de Angelo,” their food is always healthy, fresh and organically grown. New recipes never fail to delight, most especially their lavish grazing table. Of course, the baristas are highly trained and know everything there is to know about coffee and its brewing methods.

GypsyBrews: Nomadic Coffee Gets Baguio City Caffeinated One Event at a Time

Since the pop-up cafe opened in the latter months of 2019, events were booked one after the other. In October, they were featured at ABS-CBN’s morning show “Naimbag Nga Morning Kapamilya.” It was at this feature where Head Barista Sir Kenneth introduced their V60 manual brew and the Nitro Cold Brew which is one of the cafe’s signature drinks. Chef Ro, on the other hand, completed the mobile coffee bar experience with a grazing table that would make anyone feel comfortable as they help themselves to their aperitif of choice. Among their specialty homemade spreads are Mojito Cream Cheese, Hummus, Chicken Liver Pate, Herbed Cream Cheese, and Olive Oil and Balsamic, all best enjoyed with either pita bread, ciabatta or the classic bagel.

 

In November they set up their mobile coffee bar in events by Heneral Barber Lounge & Spa, Pranalaya Yoga & Wellness Center Baguio, and the Hobby Exposure Convention Baguio at PFVR. In the relaunch of Heneral Barber Lounge & Spa, customers at the haberdashery were welcomed by the nomadic cafe’s coffee selections featuring locally-sourced beans from Sagada, Benguet, Barako, and Kalinga. The Craft Coffee line-up consisting of Cold Brew, Cold Brew Latte, Nitro Cold Brew and Nitro Cold Brew Latte definitely is the coffee fix you never knew you needed until you’ve taken a first sip. Espresso, hot or iced, with about nine variations were readily available, as well as freshly baked pastries and snacks.

At Pranalaya Yoga & Wellness Center, GypsyBrews had a more serene take on coffee. Although it may seem odd to some — a yoga studio and a cafe in one place — this whimsical combination is what makes the pop-up cafe suited to the words “gypsy” and “nomadic.” Sir Kenneth describes this precisely, “The last place you would think of having coffee andun kami.” This out-of-the-ordinary idea is pretty clever if you ask me. At Pranalaya, the Sagada Medium Roast Drip Coffee was highlighted that is perfectly paired with some healthy sandwich options. It is at these times when Chef Ro gets to make dishes specifically for the people in the events, depending on where they are. Although they have mainstay menu items, when they go around she gets to practice her culinary expertise.

The third event that month brought GypsyBrews to HexCon Baguio 2019 at the PFVR Gymnasium. This time, they were caffeinating people in character. Getting a coffee overdose at events like these gets pretty interesting!

In December, the nomadic cafe was booked to caffeinate even more events. In the industrial and fashion upcycling competition, YMCA Design Museum, GypsyBrews gave a workshop called “The Art of Coffee” on coffee appreciation focusing on brewing, cupping, and tasting. Giving talks like these ultimately spells the difference between people who just “love” coffee from those who are passionate about it.

Shortly after YMCA, Mt. Cloud Bookshop invited GypsyBrews to the Coexist Workshop where they served “great food and warm coffee with always, a genuine smile.”  The Facebook post by Teyarosa gives a full description of just how being a coffee nomad brings people together beautifully.
